Here are six quirky things about me:

1) I cannot stand to walk on a dirty floor without shoes on... so I am constantly sweeping my kitchen.

2) When I run I have to listen to music, otherwise I can hear how hard I am huffing and puffing and I cannot concentrate.

3) I would love to own a small catering business... I love to cook (and eat) I think I could cook all day long :)

4) I have to sleep with pillows all around my body..... esp since my husband is a human furnace.

5) (I know this one is weird... and I admit it, its the first step, right?) I count my teeth when I am sitting still, not sure why. LOL

6) I don't like when someone tells me they are going to do something and then they don't follow through.

Wait....Weight

Someone asked me today if I was loosing weight!!! Do you know how good that makes me feel??? I have been running and trying to eat better. YEAH!!!

Okay, last night this is what I made for dinner, I liked the flavor. :)

Veal (I used ground turkey) Ragu with Campanelle
by Rachael Ray

2 tablespoons extra-virgin olive oil
1 1/4 pounds ground veal - I used turkey
1 carrot, chopped
1 onion, chopped
2 cloves garlic, chopped
1 bay leaf, fresh or dried
Salt and freshly ground black pepper
1/2 cup white wine
1/2 cup chicken broth
1 (28-ounce) can crushed tomatoes
12 to 15 leaves fresh basil, torn or shredded, plus extra for garnish (I used dried)
1 pound campanelle pasta, curly small lasagna shapes, cooked to al dente
Grated Parmigiano, plus 1/2 cup plus some for passing at the table

Heat a large deep skillet over medium high heat. Add oil and turkey and brown for 2 or 3 minutes. Add carrot, onion, garlic and bay, season with salt and pepper, then cook mixture 4 or 5 minutes more, stirring frequently, to soften veggies and combine flavors. Deglaze the pan with 1/2 cup white wine, scraping up all the good bits from the bottom of the pan. Cook the alcohol out of the wine, 1 or 2 minutes. Add broth to the skillet and reduce heat to medium low. Stir in tomatoes and bring sauce to a bubble. Simmer sauce until ready to serve. Add torn basil and wilt the leaves into the hot sauce. Remove bay leaf from the sauce. Toss hot cooked pasta with 1/2 cup, a couple of handfuls, grated cheese. Combine hot pasta and cheese with the veal ragu in a large serving bowl or platter. Serve with extra cheese for topping.

Chinese Pepper Steak

My mom gave me this recipe and all I can say is yummm. It is easy to make and is done by the time your rice is finished cooking. Try it, let me know what you think!

1.5 lbs sirloin steak; sliced thin
2 green bell peppers; cut into bite-sized pieces
1 yellow onion; cut into bite-sized pieces
1 can diced tomatoes; drained
2 cups water
1/4 cup vegetable oil (I used much less than this)
1/2 teaspoon ground ginger
1 teaspoon garlic salt
1 tablespoon granulated sugar
2 tablespoons corn starch
4 tablespoons soy sauce

Heat oil in a large skillet until very hot. Add the meat and stir-fry until nicely browned. Add the onion, water, garlic salt, and ginger. Bring mixture to a boil, cover and cook for about 5 minutes. Add the bell peppers, cover, and cook about 5 more minutes, or until the peppers are tender. Add the tomatoes.
Combine the sugar, corn starch, and soy sauce in a bowl and whisk together until well combined. Add this mixture to the meat and pepper mixture and bring to a boil. Continue to cook, uncovered, until the sauce thickens.
Serve over steamed rice.

Mexican Chicken

We love this recipe and have been making it for a long time :)

MEXICAN CHICKEN

2-3 boneless skinless chicken breast
1 whole bag of nacho flavored Doritos
1 can Rotel
One onion diced and sauted (or if you have dehydrated onions from your food storage those are fast and easy)
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 can diced green chilies
2-3 cups cheddar cheese
reserved chicken broth

Boil chicken until done. To give the chicken and broth more flavor I often add chicken base to my water, it gives it better flavor, I buy it at Sam's and use it in everything!!

Mix Rotel, soups, chilies, onion and 2 cups of chicken broth.
When chicken is done, allow to cool until you can pull apart and shred it. Pour a bit of soup mixture into bottom of a casserole dish then top with a layer of crushed ships then chicken, soup mixture and cheese, keep layering until all ingredients are gone. Top with remaining cheese.
Bake at 350°F for 20-30 minutes or until bubbly and delicious, YUMMM!

Rain, Rain Go Away!!

We are getting rain from Hurricane Gustav.... it just started raining last night and I can say I am already sick of it! :) The rain is not supposed to stop until Saturday. Our weather guys are saying some parts of Arkansas can get up to 15 inches of rain. I was supposed to start running again this morning, but I chose to stay in bed vs. running in the rain, lol.... wouldn't you?

Last Tuesday I got a stomach bug and was out for two days. On Thursday when I was on my way to work and stopped to drop off the girls right after we got to preschool Bailey threw up all over me, so we went back home. Fun, huh? Thankfully her sickness did not last very long, she was such a trooper!!! She did not complain at all! I ended up staying home on Friday as well, so my sickness turned into 7 days off with the weekend and the Labor Day holiday.

Labor day we went to my moms house and grilled hamburgers and hot dogs. That night we went to Robynn's house and they grilled hamburgers and hot dogs! We love doing things with the Spencers... I will really miss them when they move back to Utah next year.
