We love this recipe and have been making it for a long time :)
MEXICAN CHICKEN
2-3 boneless skinless chicken breast
1 whole bag of nacho flavored Doritos
1 can Rotel
One onion diced and sauted (or if you have dehydrated onions from your food storage those are fast and easy)
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 can diced green chilies
2-3 cups cheddar cheese
reserved chicken broth
Boil chicken until done. To give the chicken and broth more flavor I often add chicken base to my water, it gives it better flavor, I buy it at Sam's and use it in everything!!
Mix Rotel, soups, chilies, onion and 2 cups of chicken broth.
When chicken is done, allow to cool until you can pull apart and shred it. Pour a bit of soup mixture into bottom of a casserole dish then top with a layer of crushed ships then chicken, soup mixture and cheese, keep layering until all ingredients are gone. Top with remaining cheese.
Bake at 350°F for 20-30 minutes or until bubbly and delicious, YUMMM!

My mouth is watering, that sounds so good. I have chicken thawing out to make something with it, maybe this is just the recipe.
Is this your Dorito Chicken you always tell me about? I will have to try it...only with 2 cans of chicken soup. No mushroom at our house you know.

We do it with 2 cans of chic soup, too! Plus, we add corn. Yummers! You've been in some fun musicals! I have seen Cosi Fan Tutte...at BYU. I remember it being pretty funny.
