Recipe website & I read a BOOK!!!

I really really like it!!! She takes the most amazing pictures and they are step by step. She has some really good looking recipes on her site. Take a look around and I think you will like it too! :)


BOOK

Okay, okay!! I will be the first to admit I am not a reader AT ALL!! My friend Robynn started reading a book series that her sister in law got for her and she was hooked and now I am too! If you have not heard of the series of books by Stephanie Meyer than you have to go now and you must run out and buy her first book of the series book Twilight you will be up all night reading this book! I read the first book (400 pages) in two days! :) If you saw The Dark Night than you also saw the preview to a movie being put out about her first book Twilight :) Read it and let me know what you think!

White Chicken Chili

My friend Deana gave me this recipe a few years ago, it is Baileys most requested meal. I have even placed in 2 chili cook off's with the recipe! :) YUMMMM

White Chicken Chili

In a large pot add:
1 can chicken broth
4 boneless skinless chicken breasts
1/2 chopped onion
1 tsp. Garlic salt

Boil until chicken shreds easily and is fully cooked. Reserve broth and shred chicken. (Be sure to not have it too high or the broth will cook away.)

Add:
1 additional can of chicken broth
Shredded chicken
4-6 cans Great Northern white beans
1 small can Herdez green salsa
2 small can chopped green chilies

Then stir in 16 oz. sour cream and heat until warm but not boiling. Serve with crushed tortilla chips, cheese, and sour cream on top of each bowl. This also freezes well.

Taco Soup

This is a very easy very fast meal that everyone loves.

Taco Soup

1lb cooked ground beef OR 3 large chicken breasts
1 onion diced
1 package taco seasoning
1 can chili beans
1 can kidney beans or black beans
1 can corn
1 can rotel
1 can diced tomatoes
1-2 cans diced green chilies
1 package dry ranch seasoning mix
water
cheese
corn chips
sour cream

Combine everything except the cheese and chips. If you use ground beef, saute your onions with the beef, if you use chicken saute the onions seperatly. Put enough water so the soup is as thick/thin as you like. Tonight I added a third can of beans (great northern) so the soup was not spicy. If you are using chicken I just let the chicken cook in the broth until cooked through and then dice. You can really add what ever you want to this soup, black olives, ect. Serve over corn chips with cheese and sour cream in each bowl. This can even be made in the crockpot while you are at church :)

This is Taylor at my sisters house where we celebrated the 4th of July.

Bailey is posing for the camera(dosent she look OLD) behind her is Aaron's mom, Becky.
Bailey and Taylor went to Robynn's house to swim with her boys, you can see Tay in the corner and Bailey with Tyler..... they are both convinced that after Tyler goes on his mission they are getting married. LOL

Robynn and Rex brought Tyler and Prestons 4-wheeler over to ride with our girls as they ride their Jeep. Bailey some how gets confused and calls her Jeep her Beach...... not sure where the confusion came from????

Roast with water gravy

I have many memories of my mom making this meal. It is so worth the hours of simmering!!

1 large pot roast
4-6 cloves of garlic
beef base + water (or beef broth)
vegetable oil
large iron skillet w/lid
rice


Cover bottom of skillet with oil and place over medium high heat. Make a few slits in the top and bottom of your roast with a knife and stick one clove of garlic down in each of your slits. Once oil is to the almost smoking stage, CAREFULLY place roast in oil and sear all sides of the roast until they have a nice brown (not burnt) look. Add beef broth to skillet until almost covering, or as much as your pan will hold. Once the broth comes to a boil, cover and reduce heat until simmering and simmer for several hours until roast is falling apart with a fork. Serve with rice.

We always have potato salad and lima beans with this! YUMMM!!!

Chicken Piccata

I love getting this dish at Macaroni Grill!! So we made it last night for dinner YUMM

4 skinless, boneless chicken breast halves - pounded out until thin
salt, pepper and garlic powder to taste
1 tablespoon olive oil
1 tablespoon butter
1 (14 ounce) can quartered artichoke hearts, drained, liquid reserved
sliced fresh mushrooms
1 cup white wine (i used cooking wine)
1 tablespoon capers
1/4 cup lemmon juice
flour

Season chicken with salt and pepper and dredge in flour. Heat oil and butter in a large skillet over medium heat. Brown chicken in oil and butter for 5 to 7 minutes per side; remove from skillet, and set aside. Place artichoke hearts and mushrooms in the skillet, and saute until mushrooms are brown and tender. Pour in reserved artichoke liquid, wine and lemon juice. Reduce heat to low, and simmer for 5 min, add chicken back into the pan until chicken is no longer pink and juices run clear. Stir in capers (i held these out and just added them to my bowl b/c the rest of the family does not like them). I tossed with al dente angel hair pasta.
