This is a very easy very fast meal that everyone loves.
Taco Soup
1lb cooked ground beef OR 3 large chicken breasts
1 onion diced
1 package taco seasoning
1 can chili beans
1 can kidney beans or black beans
1 can corn
1 can rotel
1 can diced tomatoes
1-2 cans diced green chilies
1 package dry ranch seasoning mix
water
cheese
corn chips
sour cream
Combine everything except the cheese and chips. If you use ground beef, saute your onions with the beef, if you use chicken saute the onions seperatly. Put enough water so the soup is as thick/thin as you like. Tonight I added a third can of beans (great northern) so the soup was not spicy. If you are using chicken I just let the chicken cook in the broth until cooked through and then dice. You can really add what ever you want to this soup, black olives, ect. Serve over corn chips with cheese and sour cream in each bowl. This can even be made in the crockpot while you are at church :)
